As part of UK Volunteers Week, Vacherin hosted its first beach clean on Gabriel’s Wharf in central London. The team started with a morning briefing from ByWaters who outlined the growing problem of plastic pollution on our waters both nationally and globally. Thanks to the ‘David Attenborough affect’ more and more people are becoming aware of the issue and want to help solve it.

Vacherin attains Zero-to-Landfill Status

At the beginning of this year, we set ourselves the goal of achieving zero waste to landfill and 80% recycling rate by 2018. Following our latest waste audit, we're proud to say we're already half way there! In 2016, Vacherin sent zero waste to landfill and recycled 70% of our waste. The waste which was not recycled was sent to incineration, to be transformed into energy to power homes and businesses in London.

Vacherin have achieved the highest rating from the Sustainable Restaurant Association (SRA), for the second year in a row! Not only have we retained our 3 star rating, we improved our overall score by 7%. This puts us in the top 13% of SRA members in London.

Vacherin celebrates Earth Day!

Last Friday, 22nd April, Vacherin celebrated Earth Day across all its operations. Our teams did a fantastic job raising awareness of environmentally friendly practices and sharing tips with our customers and clients. Our teams visited Lyndhurst primary school speaking about food provenance, encouraged recycling and promoted low-carbon and nutritious menus across all our operations.

Vacherin Cares 2015/16 report release

Our annual Vacherin Cares 2015/16 report on sustainability & CSR has been released. The outcomes are the result of wide-ranging, long-term and increasing investments in three areas: food; environment; and community. Examples of innovation in these areas include: continuing the ‘Nutritious and Delicious’ healthy eating range, ‘Red Meat Free Mondays’, and the ‘I’mPerfect’ fruit and vegetables initiatives. Partnerships with coffee-recycler Bio-Bean and volunteering projects with local charities Deptford Reach and Luminary Bakery are three further examples of innovation.

Making gluten free tasty

This quarters Marketing workshop played host to an impressive variety of gluten free food. A gluten-free diet isn’t just for those with celiac disease or a wheat allergy. Although eating wheat products, especially whole wheat, does offer some health benefits, the gluten can actually be harmful.

Kahaila Charity

Last week our Director of Food, Dan Kelly, spent time volunteering at Kahaila charity in east London. The charity runs a small café on Brick Lane supporting several projects focused around building community and bringing low income / vulnerable groups of people off the streets. Dan spent time helping to redevelop the café’s menu then taught the team and other volunteers how to create his delicious dishes. Great work Dan!

Luminary Bakery

Last Thursday, Shane Cooke, our Company Executive Chef, took the day to volunteer with a social enterprise in East London called Luminary Bakery. The charity project works with vulnerable and low income women to provide baking skills and support in finding stable and long-term employment. Shane taught the group how to make our ‘Vachtoria’ cakes, showing them specific baking skills and showing them the process for creating their very own dishes. Everyone had an amazing time, and can’t wait for the next workshop!

Recycling in action

The Sustainability Focus Group, with the addition of some green-focused clients went on a fascinating tour of London's largest Materials Recycling Facility (MRF) - at Bywaters plant in East London. The group had a tour of the enormous facility, as well as a presentation from the Bywaters team, to see how our recycling is segregated and learnt first hand some of the ways to improve recycling rates.. and save clients money!

Our Sustainability & CSR Lead, Anthony Kingsley, attended the annual Hospitality and Food Service Agreement workshop organised by WRAP. He featured on the Waste Prevention panel along with Sustainability Managers from Unilever, Sodexo and the Greater London Authority. Anthony spoke about best practice, and how we have managed to achieve a 75% recycling rating across our sites. Finding creative and innovative ways to prevent or reuse our waste product is increasingly important, after all, one person’s waste is another person’s biofuel!

Friday saw a team of our senior chefs head out to Heron's Farm, Coggeshall, Essex to visit Rare Breed Meats - a family-run firm led by Howard and his son George, who gave us a great insight into how our top quality meat is produced. Following a tour of their farm, understanding how they rear their free range turkeys and geese, we then met some of the Gloucester Old Spot pigs, black-face sheep and Dexter cattle....

Last week we enjoyed a week of action packed competitions and lots of fun at the huge catering industry event 'Hotelympia'. We were involved in live debates about healthy eating & technology at the technology hub, our 'cake artiste' and Head Chef Nick Smith won Gold for a third year in a row for his 3 foot grandfather cake piece! Nikki Lowe received 'Merit' for his efforts in the Tilda chef of the year competition and the Vacherin runners scored fantastic results in the 10k run just to get things warmed up!

The awards were hosted by the Lord Mayor Fiona Woolf and Vacherin, for the 3rd time in 4 years were recognised for being one of the most sustainable businesses in the country. We are up against some tough competition this year in the form of Wahaca Restaurants, The Castle Climbing Centre, Clink Charity and Shropshire Energy. This week we're all recovering from two fabulous Vacherin Christmas parties, our Client Christmas party on Thursday the 28th and our all company Christmas party the following night on the Friday! Our Client and prospect was a festive street food extravaganza! We had 12 stalls of amazing Vacherin creativity all themed up with a different street food, and a huge cocktail bar serving up bespoke festive (and lethal!) treats!

The Vacherin runners have been at it again on their mission to help our brilliant charity Debra. They devoted weeks of training and fundraising to ensure they had all the relevant support for the big day. The Great South run was completed by 8 of our employees on Sunday 27th October in Portsmouth on a very blustery day! They have currently raised £1800. A huge well done to all the team.

We are very excited to announce Vacherin were this years winners at the lunch business awards 2012 for the 'Marketing Award'. Our 2012 culinary marketing concept for 'A journey around the London food scene' came out on top ahead of stiff competition! The key elements of our campaign include a monthly visit to a different area of the city to celebrate the associated cuisine and culture and tie in with key events, for example, August stopped off in Brixton celebrating throughout our business Caribbean food, with key events such as Notting Hill carnival and seasonal foods such as apricots. Having a strong marketing theme is key to our unit activity and keeping our clients and customers entertained!

Last week we celebrated our annual ‘Hot Shots’ awards ceremony at The Building Centre in the west end. It was a great celebration recognising much of the talent and hard work within our business. We saw chefs awarded for winning ‘Hot Nosh’ internal cooking competition, special 10 year long service awards recognised, and our guest speaker Keri Moss share her fantastic journey up the catering ranks with us, along with much more! Huge congratulations again to all the winners!

Topical as ever: BIFM

Just a few days ago Vacherin hosted our first BIFM (British Institute of Facilities Management) event at one of our clients Field Fisher Waterhouse on the subject of why do companies have catering and specifically contract catering. It was a very interesting, lively and interactive event looking at the relationship between the client and the caterer with lots of emphasis on communication and structure for the most successful outcome for all parties. Our Managing Director Mark Philpott gave an insight from the caterer's point of view and also answered questions with the rest of the panel at then end. Dan Kelly, Vacherin's Director of food re-created an abundance of street food treats, and some of the tastiest popcorn (as in the picture) to take away, along with a sugar free Nutritious and Delicious banana and date bars. It was a great evening - we look forward to the next!

Nick cleans up at Cake international

Truly cemented as a superstar of the cake making world, our notoriously talented chef Nick Smith took Gold and Best in Class for both of his cake entry's at Cake International at the NEC this weekend. Amazingly, and in sequence to his performance at this year's holelympia he also won over all 'Best in Show' for 'The Viking' cake. Huge congratulations going out to Nick, well done!

We had a great night out in Islington last night at the Lunch! Awards. Vacherin won best 'Grab and Go Concept' for Nutritious and Delicious! Well done to all the team - especially Lloyd Mann and our Nutritionalist Gary Baverstock!

Zoe Moulson was the final member of the Vacherin senior team to complete her 'Back to the Floor' last week. This summer has seen all Vacherin Directors go back to where it all began; in a unit in London! They put on their whites and were all based for a week in one of the Vacherin kitchens - at the heart of all the foodie action! We saw blood, sweat and tears (not really the latter) but they did all learn so much about how great Vacherin is, derived as we always say from great people, and as in life how we could improve to be even better! The overall feedback was a big recommendation for all directors of all companies that really want to know 'how it is' to do this with their business! :)

Vacherin are leading the industry with new ideas, and we now learn the largest & most powerful food company in the world ALSO believes communicating nutritionals through technology is the way to go! ‘Hot Shots’ 2012!

Hot Shots is the annual Vacherin awards ceremony where we celebrate all people great and all things big and small - and also have a great time celebrating afterwards! We were so happy to announce our employee of the year – Rick Jones, among so many other deserving awards. Andy Mcfadden, one of the youngest Michelin starred chefs presented the chefs awards for our internal cooking competition ‘Hot Nosh’. The venue was hosted by our good friends ‘The Royal Academy of Science’ and some of the tastiest ‘street food’ canapés and creative ‘bowl food’ was served by our very own team. Well done to all the winners and team Vacherin as a whole!

Nutritious and Delicious!

Today we very excitedly launched our innovative new healthy eating brand that merges delicious healthy food with technology. As the first contract caterer to use QR codes for nutritional information, our customers can now get instant detailed nutritional information on their smart phones by scanning QR codes on point of sale materials alongside the new healthy dishes. Backed up by its own website and Nutritionist Gary Baverstock, Vacherin launch with 25 products and will continue to grow this exciting and interactive range of food and information month on month. We have also treated each of our contracts to an ipad to interact with daily and learn all about the health & nutritional benefits from opting into our different categories under the N & D brand. In addition to this the development team set out on a tour round our units to introduce the brand, allow people to sample delights from the range, learn about the program and its technology and pick Gary's brains on all things nutrition!...

Directors go back to the floor!

So it's well under way - Our senior team are going back to where it all began, in a unit somewhere in London! This quirky initiative sees the likes of Mark, Clive, Phil, Zoe, Debbie and Stuart donning an apron and getting stuck into the various demanding jobs that come from Vacherin's kitchens! They will experience how it is currently on the shop floor level and we believe lead to an even greater Vacherin. Watch out for further news!

At the ACE Industry quiz night Vacherin went home the winners! Up against approximately 40 teams, we enjoyed a night of food and wine and lots of racking our brains! Our efforts paid off and we were (for the 2nd time!) crowned the most intelligent caterers!

Congratulations to Nick Smith! He wins again at Hotelympia in both the Decorated Celebration Cake Class & Novelty Cakes Class. Nick was equally awarded the higest ranking of Gold and Best in Class in both catagories, for both his cake enteries. There was tough competition with lots of detailed work to contend with - but our boy came out on top and is making quite a reputation for himself! Well done Nick - What a star!

Hotelympia 10k run completed!

A Sunday morning early start is never pleasant but the Vacherin team of runners were out in force yesterday to take part in the 10k run at Hotelympia! WOW what a cause!

We are very proud to announce that ‘Valentines for everyone’ the pop-up restaurant in Fareshare's food depot in Bermondsy was a roaring success! In association with Fareshare, Streetsmart, forgotten feast and us - £13,000 was raised to generate meals for homeles people. This pop up event marked a collaboration of food industries and charities to have fun and raise some much needed funds at the same time! We were honoured to support an amazing cause and we managed to have a jolly team night squirrel eating on the final evening! Watch out for the next one...

Another Best in Class for Nick!!

Nick Smith, our head chef at Imagination, won another Gold medal and was given Best in Class for his Cake Corral entry at Cake International. The win was all the more impressive as there were 40 entrants, 8 of whom won Gold.

This month saw the 4th of our educational & entertaining wine region trips, hosted by our wonderful & knowledgeable wine merchants Simon & Neill. Our team of chefs & managers were treated royally on a tour of the vineyards & wineries of Umbria, tasting some spectacular wines that may well be creeping on to our wine lists soon, and learning of a whole host of previously unheard of grape varieties:

Hot Nosh Prix d'Or winners announced

The overall winners of Hot Nosh 2011 were announced yesterday, at last ending the agonising wait for the teams who were in the running. Having won the "Two number fourteens please!" round and with strong showings in the other two competition days, the winners were Soup-a-Stars, the combined team from JLT, Field Fisher Waterhouse, Cushman & Wakefield and Ince, who win a dinner at the restaurant of their choice as well as the kudos that goes with coming top of the pile. Well done to everyone who entered and good luck next year!

No, we're not branching out of London - but yesterday Mark, Clive and Hamish completed the London to Brighton Bike Ride in aid of the British Heart Foundation. They survived the changeable weather to arrive in Brighton in one piece in time for tea & cakes. "Surprisingly hilly" was Mark's understated comment on the route - with Ditchling Beacon a particular favourite highlight.

Two number fourteens, please!

Things got very spicy on main course day of Hot Nosh when we challenged our teams to come up with an authentic Pad Thai, a fine dining Indian dish and a North African dessert. Is it a coincidence that our team from the East of the City, Soup-a-Stars, won? Their curry dish was way out in front, and combined with a strong showing in the other two classes to just edge out teams 5 Stars and Pedigree.

Our annual culinary competition goes from strength to strength as we grow in size. In this year’s format 6 teams were created, with chefs and managers from smaller operations being combined with our 6 largest kitchen teams so that expertise & creativity was shared equally across the groups. The starter event Morning Glory tested omelette-making skills, as well as a fine dining breakfast dish and a staff dining offer of a combination breakfast snack....
