      <title><![CDATA[Topical as ever: BIFM]]></title>
      <description><![CDATA[Just a few days ago Vacherin hosted our first BIFM (British Institute of Facilities Management) event at one of our clients Field Fisher Waterhouse on the subject of why do companies have catering and specifically contract catering. It was a very interesting, lively and interactive event looking at the relationship between the client and the caterer with lots of emphasis on communication and structure for the most successful outcome for all parties. Our Managing Director Mark Philpott gave an insight from the caterer's point of view and also answered questions with the rest of the panel at then end. Dan Kelly, Vacherin's Director of food re-created an abundance of street food treats, and some of the tastiest popcorn (as in the picture) to take away, along with a sugar free Nutritious and Delicious banana and date bars. It was a great evening - we look forward to the next!]]></description>

      <description><![CDATA[Truly cemented as a superstar of the cake making world, our notoriously talented chef Nick Smith took Gold and Best in Class for both of his cake entry's at Cake International at the NEC this weekend.       <title><![CDATA[Committed to reducing waste]]></title>
      <description><![CDATA[We are one of a small number of contract caterers to have signed up to the Hospitality and Food Service voluntary agreement to cut food and associated packaging waste and increase recycling.

Initiated by the 4 UK governments and WRAP, the organisation that promotes recycling, the voluntary agreement targets companies in the hospitality sector to cut packaging waste by 5% and to increase the overall amount of food & packaging that is recycled to 70%.

Through our twice yearly waste audits we are already identifying where reductions in total waste can be achieved, with individual action plans drawn up for each site. Across all our operations we currently recycle 67% of all waste, with a further 17% going to waste to energy, so will be working with our clients to increase recycling while reducing the overall waste and the amount sent to landfill.]]></description>

      <description><![CDATA[Zoe Moulson was the final member of the Vacherin senior team to complete her 'Back to the Floor' last week. This summer has seen all Vacherin Directors go back to where it all began; in a unit in London! They put on their whites and were all based for a week in one of the Vacherin kitchens - at the heart of all the foodie action! We saw blood, sweat and tears (not really the latter) but they did all learn so much about how great Vacherin is, derived as we always say from great people, and as in life how we could improve to be even better! The overall feedback was a big recommendation for all directors of all companies that really want to know 'how it is' to do this with their business! :)]]></description>

      <description><![CDATA[Hot Shots is the annual Vacherin awards ceremony where we celebrate all people great and all things big and small - and also have a great time celebrating afterwards! We were so happy to announce our employee of the year – Rick Jones, among so many other deserving awards. Andy Mcfadden, one of the youngest Michelin starred chefs presented the chefs awards for our internal cooking competition ‘Hot Nosh’. The venue was hosted by our good friends ‘The Royal Academy of Science’ and some of the tastiest ‘street food’ canapés and creative ‘bowl food’ was served by our very own team.       <description><![CDATA[Today we very excitedly launched our innovative new healthy eating brand that merges delicious healthy food with technology.  As the first contract caterer to use QR codes for nutritional information, our customers can now get instant detailed nutritional information on their smart phones by scanning QR codes on point of sale materials alongside the new healthy dishes. Backed up by its own website and Nutritionist Gary Baverstock, Vacherin launch with 25 products and will continue to grow this exciting and interactive range of food and information month on month. We have also treated each of our contracts to an ipad to interact with daily and learn all about the health & nutritional benefits from opting into our different categories under the N & D brand. In addition to this the development team set out on a tour round our units to introduce the brand, allow people to sample delights from the range, learn about the program and its technology and pick Gary's brains on all things nutrition!

      <description><![CDATA[4 Gold Medals, 2 Bronze Medals & Best in Class!
Huge congratulations to all the boys listed below, especially all the newcomers to competing - all but Nick - A huge achievement all round! Our winners:
Lawrence Newsham competed in the Live Churchill Pasta Dish Class.
Martin Barrett entered a display of a Restaurant platter of fish into the live Gram Masterclass event and won Gold and Best in class.
Alan Sosa also competed live in the Robot Coupe Challenge and took home a Bronze medal.
Andy Finch & Danny Nelson entered the Live Major International class and together were awarded Bronze.
And finally, as well as his cake winnings in the blog below Nick won an extra Gold and Best in Class overall for the entire sugar work section!

      <description><![CDATA[The 2nd annual Vacherin Christmas Pudding competition saw entries flood in from chefs, front of house staff and head office team members all hoping to have their creation crowned as the official Vacherin Christmas Pudding 2011.
The stand-out entry was from the Disney chefs team, with the judges declaring it the best for consistency, colour, taste and alcohol content. The pud now has the honour of being the official recipe for all Vacherin operations this year.]]></description>

      <description><![CDATA[The overall winners of Hot Nosh 2011 were announced yesterday, at last ending the agonising wait for the teams who were in the running. Having won the "Two number fourteens please!" round and with strong showings in the other two competition days, the winners were Soup-a-Stars, the combined team from JLT, Field Fisher Waterhouse, Cushman & Wakefield and Ince, who win a dinner at the restaurant of their choice as well as the kudos that goes with coming top of the pile.       <description><![CDATA[This week saw the first ever Barista of the Year competition, hosted at illy’s Centre of Excellence and judged by illy’s Head of Quality, Marco Arrigo; our man at illy, Davide Rocchi, and our very own coffee guru, Anna Morris.

5 finalists had to prepare the perfect espresso, followed by the perfect latte, cappuccino and machiato, and finally their own signature drink.

The standard of drinks was superb, with all 5 performing well under pressure, but the outright winner was Lukasz Pancewicz, barista on Premier Crew, who impressed throughout, not least with his signature Boozy Hazelnut Mocha.]]></description>

      <title><![CDATA[Sustainable City Awards Winners!]]></title>
      <description><![CDATA[We are delighted to say that once again we have been crowned winners of one of the most prestigious sustainability awards in London, winning the category for Environmental Management in SMEs (Small & medium-sized enterprises).

This follows on from winning the Sustainable Food category in 2009 – a category for which we were also shortlisted this year.

The award is recognition for the all-encompassing approach we take to sustainability, from staff training, supplier & product selection and waste management though to customer communication & awareness.

Simon Mills, Head of Sustainable Development at the City of London Corporation commented, “Despite these being hard times for businesses, we have seen unprecedented numbers coming forward for recognition in this years awards.

Vacherin were commended for proving that environmental performance and business growth can go hand in hand – continuing to grow, while investing in staff training and engagement, supply chain and environmental management.”

      <title><![CDATA[Nick and Mario bring home Gold at Hospitality 2011]]></title>
      <description><![CDATA[Vacherin Chef’s Nick Smith and Mario Golm blew away competition at Hospitality 2011, bringing home a total of four gold medals and two best in class awards.

Vacherin Commercial Director, Phil Roker, says: “I am extremely proud of Nick and Mario. To win four gold medals and best in class twice when they were up against some of the largest catering companies in the UK, is just amazing. They are both extremely talented chefs and a testament to the Vacherin team.”

Patissier enthusiast, Nick Smith, scooped gold and best in class in the novelty cake category with his vegetable themed ‘Cordon Vert’ sugar craft creation, whilst Mario wowed the judges with his combination of ‘Halibut Basil Marinière’ and a contemporary ‘Pear Belle Helen’ in the Live Theatre Steelite International Creative Challenge, also winning gold and best in class.

The culinary duo were both awarded gold medals when they teamed up for the Figgjo Masterclass, impressing the judges with a fine dining version of ‘Cumberland Tattie Pot’ and ‘Rhubarb and Ginger Crumble’ with a special modern twist.

 Nick says: “I am over the moon that we’ve done so well at the Hospitality show this year and I am thrilled that I was awarded best in class in the novelty cake category. I only started entering competitions last year but this is now my third gold medal – it means so much to me to be recognised for what I love doing.”

 Mario comments: “I would like to thank my mentor at Vacherin, Alan Eggleston, for supporting me over the last few weeks – I couldn’t have done this without him.”

 Nick and Mario’s outstanding achievement was highly commended by the panel of judges including Chairman of Judges, David Walklate.]]></description>

      <title><![CDATA[Vacherin kicks off volunteering initiative with Fareshare]]></title>
      <description><![CDATA[We recently held our first Vacherin volunteering day with Fareshare a national UK charity supporting communities to relieve food poverty.

4 of our staff spent the day in Fareshare’s warehouse and then on the road distributing food to those in need in the first of what will be a monthly volunteering day open to any member of staff to join in.

FareShare is at the centre of two of the most urgent issues that face the UK – food poverty and food waste  

The charity addresses these issues in three ways:

  Providing quality food – surplus ‘fit for purpose’ product from the food and drink industry – to organisations working with disadvantaged people in the community 
 Providing training and education around the essential life skills of safe food preparation and nutrition, and warehouse employability training through FareShare’s Eat Well Live Well programme 
 Promoting the message that ‘No Good Food Should Be Wasted’  ]]></description>

      <title><![CDATA[Hot Nosh – the Hottest Year Yet]]></title>
      <description><![CDATA[Our annual culinary competition goes from strength to strength as we grow in size. In this year’s format 6 teams were created, with chefs and managers from smaller operations being combined with our 6 largest kitchen teams so that expertise & creativity was shared equally across the groups. The starter event Morning Glory tested omelette-making skills, as well as a fine dining breakfast dish and a staff dining offer of a combination breakfast snack.

Main course day – “Envoyez!” had the teams battling with a blind box of ingredients to produce a healthy vegetarian meal; producing a classic Escoffier dish and showing their pastry skills with a classic raised cold pie.

The final hurdle, “Oh that’s lush!” was all about creativity for the sweet tooth with a selection of petits fours and an afternoon tea cake, with some incredible edibles being produced by every team. Special mention goes to the Disney team who dressed up in full Mad Hatter and Queen of Hearts costumes to accompany their Alice in Wonderland-themed entry.

The prestigious overall “Vacherin Prix d’Or” was won by our Eastenders from JLT, Field Fisher Waterhouse and the Whitechapel Gallery who win dinner at the restaurant of their choice.]]></description>
